30 Min Recipe: Chicken Stir Fry

2022 is the year we make it to the table as a family more nights a week then not! 

If you've made the same commitment, we've got good news for you: 
30 Min Meals! 

Long ago, someone gifted me a beat up, heavily loved cookbook made specifically for "one pan/pot" inspired meals. 
It was the sweetest gesture because let's be real, I don't have hours to spend in the kitchen. 

Give this meal a try and let us know how it went for you. 


Chicken Stir Fry Sheet Pan

1 pk 
Frozen Stir Fry 
(or any other frozen/fresh veggie mix) 
1-2 Potatoes
Peppercorn/Black Pepper

Prep: (5min) 
This is the best part. 
Just kidding- but it really is almost that easy. 
Prep all your seasoning, oil and lemon juice in a bowl. 
Brush/pour onto the meat 
(+If you're like me, you'll do another light sprinkle seasonings right on to the meat) 
Cut the potatoes into small sections. 
Now place aluminum foil over your sheet. 
Pour your 1/4 cup of chicken broth right onto the sheet. 
Now sprinkle your veggies, potatoes and place your meat in between them all. 

This part is where you get to personalize your meal and have fun. 
We added a few pieces of fresh rosemary from our garden, 2 banana peppers and a little more paprika. 

Drizzle the rest of your seasoning onto the pan. 

Cook: (25min) 
450 for 25 minutes. 
Don't worry about covering it. You want them to roast really well. 


That's it! 
Remove from the oven and toss into a big bowl or portion it onto plates. 

The best part is everyone gets to pick and choose what they want.
